I just did the turets this way yesterday and it is a fantastic idea to roll them. Much simpler than baking on a can.

I make the pattern in light cardboard then slit in into a flat piece. Make and bake the piece... then when you remove it from the oven... I used a large flat spatula and gently flipped over the piece onto a clean tea towel then using my rolling pin pulled up the tea towel and firmly and slowly rolled the piece up jelly roll style around the rolling pin! Then I placed the entire rolled up gingerbread, towel and rolling pin in the freezer for a few minutes. Once it has cooled to the touch... you can start to unroll the whole deal then slide it vertically off the pin. My rolling pin was slightly larger than the piece so after removing the pin, I pressed the piece to complete the roll... and put on a small rubber band until it was completely cooled.

It worked perfectly without even a crack!!! I am tickled.
