You are both correct. You can puchase Gingerbread House molds (Pampered Chef makes some) to make a house.
Or, you can use a typical Gingerbread House dough (the website has a few) and cut out your pieces, as you would normally roll-out and cut-out cookies.
I have not used the molds and don't know much about them, but they are out there (look on e-bay - they always have several).
