"Graham Cracker" Gingerbread House for 100 Kids

I am organizing two days of an afterschool craft project for my son's school and expect to have about 50 children each day. We are using pint size sealed (unused) milk cartoons as the frame and will be covering them with graham crackers and then decorating them with a variety of candies. (Actually due to a shortage of pint containers, we will be using two half pint containers glued together,..... somehow. So, they will actually be Gingerbread Duplexes!)
Does anyone have any ideas or suggestions as to a base that could be used for this project?
Also, does anyone have any thoughts, suggestion or experience on an easy way to provide the kids with icing? I was thinking about making many large batches of royal icing and placing small amounts in sandwich bags for storage, then snip off an end as we hand one to each child.
Any suggestions would be very appreciated!!
