I like the "Loreta's Gingerbread Dough" on my website (www.frankysattic.com). It tastes pretty good. When I want GB-man cookies, I add 1 tsp. baking soda to the mix so it is a bit softer....but don't do this if you are building a house. You don't want "as" soft walls for a house.

The strength of your walls/roof peices will depend on the humidity in your area.
