cracking pieces

Looking for some suggestions for pieces that crack after a few day sitting out. When making numerous houses, I bake all the pieces in two days and then put them in sealed baggies until I'm ready to assemble. After a few days, some of the pieces begin to crack. Do you think I'm baking the pieces too long?
