| Since I like soft gingerbread cookies, and hard gingerbread peices for a house - I do not use the same recipe for cookies that I would use to construct a house.
Most recipes for gingerbread houses do not include baking soda or baking powder - which helps to create tough/hard walls. Recipes that you would use for cookies will probably include atleast baking soda or baking powder, which will help the cookies be softer.
So, in short, if you want good eating gingerbread cookies, do not use a recipe that is meant for building a gingerbread house.
