Tips for a beginner?

Hey!
This Sunday I'm having people over and we're going to all make our own houses, obviously not as detailed as the ones here but it should be fun.
Anyway, do any of you vetran bakers have some tips?
I'm making the dough ahead of time, and then we can cut our own patterns that night. I know the pieces don't take long to bake, as for cooling time that can take awhile....is it bad to put them in the freezer to cool faster?
