(1)Try using the very long and thick candy canes cut to heighth needed. Glue to base and use as support posts just as in regular house construction.
(2)I've only tried this with the oven plywood and it works beautifully. As soon as the gingerbread comes out of the oven work quickly with a pizza cutter and/or sharp paring knife-smooth edges every time.
