I've never heard that you can't eat gingerbread made with honey, I've used honey on occasion when I've run out of golden syrup, and none of us have had any ill effects, the only thing I can think of that would matter is maybe if you keep your gingerbread for a while and it goes off? but wouldn't that be the butter in it?
