You didn't do anything wrong. It is just the humidity. Houses made from construction grade gingerbread (you can find recipes elsewhere on this site) usually last longer than graham cracker structures. The downside, of course, is that it takes a lot more preparation and so it's not as spontaneous as a graham cracker house. It's not a total loss though, you can use it as an opportunity to explain humidity to your kids.
