gingerbread roller coaster?

Hello,
My family has a gingerbread contest every year and this year we were thinking of making a roller coaster - with Santa and his reindeer riding in the cart. We are wondering if anyone has attempted a roller coaster before and if so if they have any tips. The only rules we have is gingerbread has to be incorporated somehow in the entry and everything has to be edible. We were thinking of candy canes as the poles and fruit roll-ups or airheads as the tracks but we're a little concerned about it falling down - we have to drive 2 hours to the contest. If anyone has any tips, just let me know. Thanks so much!
