Yes, a lot of recipes actually recommend that you let dough chill for at least half an hour to two hours (or overnight) so that the dough will be firm enough to roll. Gingerbread dough will keep in the refrigerator for a couple of weeks. Someone told me that you shouldn't refrigerate dough made from recipes that contain honey (just like you would never refrigerate a jar of honey) because the dough will be way to stiff to work with. The recipe listed elsewhere on this website as "plywood" contains honey - so I wouldn't refrigerate that one. I think the directions in that recipe say that. I've never tried it.
