I had planned to make gingerbread houses in my kindergarten classroom. On the day of the house making, the power went out at school so school was canceled. I have 12 pounds of royal icing in my refrigerator. The recipe said that I could keep it for 2 weeks. I need it to be in my refrigerator for 3 weeks. My question is - is it still ok to use at 3 weeks? Do I need to do anything to it before I use it? Hope someone can help me. I got several different answers from different bakers around town and do not know what to believe. Thank you.
