Use gel paste food coloring to color your dough to your desired color before rolling out your pieces. You can buy gel paste color from cake decorating suppliers.
You can also buy brick impression mats (usually used for fondant or gumpaste) from cake decorating suppliers. Or, use a knife to score the gingerbread in a brick pattern by hand before baking. Or, depending on the hardness of your cooked gingerbread pieces, use a kitchen knife, ice pick or exacto knife to score the already baked pieces. (Just be careful!) Then rub royal icing into the scored areas to give the look of mortor.
