Response to eggs vs. no eggs, molasses vs. honey

Sandy,

Honey recipes usually make the dough very stiff. Dark or light molasses depends if you want a lighter or darker colored dough. But if you plan to nibble...this is my all time favorite recipe. It's plenty strong, deepens to a beautiful color, requires no cooking, and holds up well in non-humid climates. If you're in a humid climate, I'd go with a very hard dough...like the honey ones. This one may soften and melt away all your hard work.

5 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ginger
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
1 cup vegetable shortening
1 cup sugar
1 1/4 cups molasses
2 eggs

Chill 3 hours at least. Roll & cut.
