As vegetarian, making a vegan house for a friend, I would like to thank you all for your suggestions. I live in the UK, so sugar is often out of the question due to dampness(!). In the end, I used 2 tablespoons of gram flour mixed with two tablespoons of water and 1 lb of icing sugar. It is definately NOT the same as standard royal icing, but it held up long enough for me to re-home it! It was sort of flexi, as was the vegan gingerbread recipe, which was a real nightmare to cut out, as it was very sloppy. The recipe for the Gbread did taste nice.I didn't attempt to ice the roof, but sprinkled plain icing sugar on it. The windows, doors etc I piped with 'Kinnerton' plain chocolate (certified vegan). It was very subtle, compared with my standard houses, but had a charm all of its own!
Merry Christmas and a Happy 2008 to all gingerbreaders out there.
