Me, I'm in Oregon and have never been to the Grove Park competition, so I cannot be much help.
But, to answer your question about Royal Icing - Personally, I have found that I need to use the batch that I made that night. It doesn't seem to do too well the next day. I've found it to be a little on the runny side if I try and keep it from one night to another.
But, that's just a personal observation and preference. I usually plan on using as much of the Royal Icing as I can each night and make a new batch the next day, etc.
