looking at photographs, I guess that Sept '39 Polish ground crew uniforms were almost identical to the French (including the beret). Color (of coveralls) looks like light tan canvas. Thus, not sure Russians are the best model. In 1/72 you could probably get away using Germans in coveralls and replace cap with a blob of putty to represent the beret. Just an opinion.
