in a few short hours. They start their 24 hour trek from the Armpit of the World back to North Carolina shortly.. He'll back here at the house in a two weeks. Can't wait for the stories..

lots of stories.. I see if I can remember them right... Also he's looking forward to one of his favorite meals we created together when he was a kid just a few short years ago. Teriyaki Chicken... OUR way..

It's really nothing all that special but..

Here's how I make it. Slice up a couple of pounds of boneless chicken breasts in small bite sized pieces. Put them all in a bowl and pour about half a bottle of Teriyaki Sauce on them, cover with cellophane wrap and stick it in the fridge for a few minutes (or hours if you've got'em) to soak... While that's soaking, make some rice (if the kids and their kids are going to be here it's 4 cups rice, 8 cups water) for making fried rice after you make the chicken.

Get out the big wok and get it HOT (I cook on high heat). Pour some cooking oil (I use Canola) in, enough to coat the lower half of the wok.. Get the oil mad and toss in the Chicken and Teriyaki. While the heat is rebuilding put a couple of tablespoons of minced garlic, a quarter cup of some Steak Sauce (I used to use thick Lea and Perrins but I can't find it anymore so I use A-1), and a half a cup of butter (margarine).. Bring it all up to boil. Keep moving it around and let it cook down to where about half of the water is gone. Add a can each of water chestnuts and mushrooms (this will put some water back in).. Cook it down some more continuing to stir to keep it from sticking or burning. You want to cook most of the water out. To the point to where you have a nice glaze sauce throughout the batch.

Once the Chicken is cooked down to where it's ready, dump it out in to a serving bowl. Turn down the heat to medium high and immediately shovel into the hot wok with some of the glaze sauce in it your cooked rice. Some butter (a couple of table spoons), a small can of peas and carrots, and a good splash of Soy Sauce. Mix it all up and be quick as not to let the rice start to burn if it sits for too long. Frying the rice takes every bit of maybe a minute if the rice is already warm.. Remove from the heat and keep stirring the rice a minute or two as the wok cools down. I serve the rice out of the wok. Make a nice bed on the plate and pile on some of the chicken, mushroom, and water chestnut mix and chow down... It's nice and salty. But not too salty.. Adding some Shrimp Sauce (Japanese Ketchup) to the whole thing on the plate is da bomb!!! The kids request it when they visit all the time...

the Marines is a lot less worrisome than some of the "mouth breathers" he used to know in school... One of his friends that joined the Marines before him just couldn't put down the Pot habit and got busted and kicked out a few months ago... I was so hoping he would rise above his upbringing by stupid parents... Guess not.

It will be up to him to divulge any stories. But really what I'm a wanting to hear is a first account of his observations.

Oh and for the record, he's not really my biological son. But we raise him and his sister from 8 and 12 (he's now 23, she's 27). They are my wife's niece and nephew. So they may as well be our kids since their parents really didn't give a rat's *** about them.
