Need Some Serious Advice !!

I'm having a cocktail party for about 75 people and I need a little menu validation.
Let me know if anyone has any suggestions.

1. Antipasta platter
marinated mushrooms
fresh mozzarella cheese
prosciutto ( if I can get it, smithfield ham if I can't )
provolone cheese
pepperoncini
hard salami
marinated artichoke hearts
olives
2. shrimp and scallops wrapped in bacon
3. chicken salad in puff pastry shells
4. marinated sliced beef with yeast rolls. Served with spicey mustard and horseradish sauce
5. parmesan crisps
6. mushroom croustades
7. cherry tomatoes marinated in vodka
8. Garlic cheese fondue ( this is as close as I want to get to a vegi platter )
broccoli florets
cauliflower florets
sliced hot sausage
9. hot crab dip in filo shells
10. cheesecake petite fors
11. chocolate covered strawberries

The only thing I see missing is a roast pig on a spit!!! LOL

The menu looks great, especially the artichoke thingy, and the crab thingy. YU MM Y.

75 people and no invite for your old pal BQ? What am I, calamari fritti?

make the hard salami --> soprasetta

make the olives --> unpitted kalamata and unpitted collosal greek (green) olives (unpitted are tastier and more importantly it's fun to watch people trying to figure out what to do with the pits)

Sorry, you'll have to settle for parmeson crisps and wine. Very yummy.

Idea:

Grill the artichoke hearts with a little Canola oil until they have some black marks. Serve cold.  People love em.

Will you use crimini, ****take, and button mushrooms for the marinated shrooms?

Hi,
An easy little different canape is curried chicken salad put on cucumber wedge...sort of triangle... tastes so good
can be made ahead...

I do a cheese quiche in the small cupcake pan...

swedish meatballs...can be made ahead and reheated

I look for the easy do ahead....

So, um, when IS this party?

Okay, one piece of serious input. If you can find it, try getting some Portugese Chourico. You can use that in place of the hard salami. It's VERY spicy and flavorful. If you don't want something that spicy, try Portugese Linguisa.Either one is MUCH better than a plain old hard salami.

And either is REALLY good on pizza or in an omelette!

White wine my foot. With 75 people I'm going to need something a little stronger than white wine.

Wow i suppose people get all doll'd up for this event too. Im used to going to parties in a pair of jeans and a tshirt or sweatshirt.

Let me know when you need some. I can freeze it, then overnight it to you...

Personally, I'd go with the Chourica. It has a GREAT flavor. I add it to traditional meat tortellini soup for added spice.
