I have some "I can't believe it's not butter" that comes in a spray bottle which I give the fillet a light coating (keeps it from drying out), sprinkle on some lemon pepper and put under the broiler for maybe 5 minutes. I think I left this flounder in for only 4 or so minutes, it was so thin. It doesn't take as long as you'd think, just until the fish starts to flake with a fork...it'll continue cooking for a couple of minutes after you take it out of the oven. Then I fry up some hushpuppies and fries (and the shrimp) and that's a meal! |
