I us Castrol SAE 20W 50 (non-synthetic). Why? Because that's what the guy who dyno'ed my engine recommended. The grade I'am using is 5W-30, it is suggested to only go to 40 if the engine burns any of the thinner oil. My engine to date has not leaked a drop or used any, but then I have only done a small amount of miles.
