I would have thought a 160-180 thermostat should be fine and would be running around 190 or so would be close. Remember the most over looked item is the proper radiator cap and pressure. Pressure lets the temp be higher without boiling and bubbling over! Now that said most cars before the early 50's didn't use pressured systems either that is why the radiators wee so big adn they had so many heating issues, so could that be an issue for you too.
