We do so many potlucks at work that I have already used my "go-to" meals (baked ziti and chinese chicken salad). Help!

Thanks,

Christina

My pulled pork/beef sandwiches. Nice for the crock pot! recipe inside. Chili is also good.

Pulled BBQ Beef/Pork Sandwiches

2 1/2 lbs lean boneless chuck roast (or pork roast)
1/4 cup ketchup
1 T. dijon style mustard
2 T. brown sugar
1 garlic clove - crushed
1 T. Worcestershire sauce
2 T. red wine vinegar
1/4 t. liquid smoke
1/4 t. salt
1/8 t. pepper
sandwich buns

Place meat in slow cooker.

Combined remaining ingredients except rolls. Pour over meat. Cover and cook on LOW for 8-9 hours.

Shred meat by pulling apart with two forks. Add one cup of sauce. Reheat in sauce pan. Spoon on sandwich buns.

Serves nicely with cole slaw.

(NOTE: when I'm home I break tradition and shred the meat part way through cooking. This way all the meat is covered with BBQ goodness.

This time, I also made up a second batch of sauce and added molasses to it. Not sure how much, but to taste. I mixed this extra sauce when re-heating the meat.)

As original recipe, 1/10 of meat on a bun is 7.5 WW points.

Unfortunately the potluck was canceled (it was an appreciation potluck for our boss and she won't even be there) - but I will keep the recipe for the future. Thanks!
