First one looks like F-16 ...

and second one doesnt seem like a Jet cockpit but more like a Heavy Cargo Plane , since it has a joystick then it must be Airbus. I believe that is the simulator for the new A400M Atlas

My guess its a T-38 talon simulator with a complete training package
