| I am searching for Puerto Rican Sweet Potatoes. Does anyone know someone who grows them and is willing to sell them? My grandmother only used them for cooking and I can't remember where she purchased them. Thanks for your help. |

River, I don't know the name of the sweet taters that my uncle got but he got them for glovers market and said they were great, you may check there. |

Not trying to be a smarty pants here, but you said she only used them for cooking and it made me wonder what non-cooking things anyone would use sweet potatoes for. |

the potatoes this person is looking for are not as orange as the ones you find now, my mama's recipe for candied sweet potatoes are so much better with the potatoes that are pale inside and not as soft....yum |

We eat them like that at our house also. S&S at one time(a short time) sold them cut like french fries. I have been eating raw sweet potatoes all week. |

Keith Smith sells Beauregard. I bought 200 lbs just for my own use--one person. He sells something else, but I don't remember what variety. |

I take five or six sweet potatoes, peel them, half them longwise, then cut them in 1/2 inch peices, line them up in a glass pan (sprayed with pam) I cut up one stick of butter all over them, top with 1 cup of sugar, bake at 350 until the sugar/butter starts to carmelize around the edges...and the potatoes get a little brown.....soooooo good |

We take 3 cups f potatoes and boil them until sft, r cook them in the pressure cooker, then add butter, milk and allspice. We either put it in a casserle dish or pie crust and bake for 30 to 45 minutes or until set. As I said before, there are no measurements as she never measured anything. |

Brian Kress has several different varities. He is listed in the book. Sweet potatoes are not going to be as good as they usually are due to so much rain this year. |

Peel and slice enough sweet potatoes to fill an iron skillet. Don't put them in yet, though.
Melt one stick of butter, 1 cup of sugar (more if you like). Use an iron skillet if you can, or a big non-stick one otherwise. You need a pan with a lid. Now put in the potatoes, and add about a 1/2 to 1 cup water (so that it's about 3/4 way to the top of the pan). Put on a lid and cook them on medium. They will take a while, but as they start to get soft and the water starts to cook out, watch them carefully and stir gently and freqeuently from the bottom. They will carmelize pretty quickly at the end.
You will have to beat your family off them in order to get a taste. My kids and husband want me to make this every night! Good with pork dishes. |
