no sugar jalapeno jelly
After comparing these two recipes, I don't know why you can't at least try the artificial sweetened one and add jalapenos.
I will post both so you can compare. I would also add the vinegar to no sugar recipe.
Sure Jell freezer jalapeno jelly
1 jar (10-1/4 oz.) whole pickled jalapeno peppers, drained, seeded and finely chopped
2-1/2 cups bottled apple juice
1/4 cup apple cider vinegar
Green food coloring
5-1/2 cups sugar, measured into separate bowl (See tip below.)
3/4 cup water
1 box SURE.JELL Fruit Pectin
RINSE clean plastic containers and lids in boiling water. Dry thoroughly.
MEASURE exactly 2/3 cup prepared peppers into large bowl. Add juice and vinegar. Add 1 drop food coloring. Stir in sugar. Let stand 10 minutes; stir occasionally.
MIX water and pectin in small saucepan. Bring mixture to boil on high heat, stirring constantly. Continue boiling and stirring 1 minute. Stir pectin mixture into pepper mixture. Stir constantly until sugar is dissolved and no longer grainy, about 3 minutes. (A few sugar crystals may remain.)
FILL all containers quickly to within 1/2 inch of tops. Wipe off top edges of containers; quickly cover with lids. Let stand at room temperature 24 hours. Jelly is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator.
REFRIGERATED APPLE SPREAD (MADE WITH GELATIN)
2 tbsp. unflavored gelatin powder
l qt. bottled unsweetened apple juice
2 tbsp. bottled lemon juice
2 tbsp. low-calorie sweetner or Splenda
Food coloring, if desired
Makes 4 half-pints
PROCEDURE: In a saucepan, soften the gelatin in the
apple and lemon juices. To dissolve gelatin, bring to a
full rolling boil and boil 2 minutes. Remove from heat.
Stir in sweetener and food coloring, if desired. Fill hot
jars, leaving l/4-inch headspace. Adjust lids. Do not
process or freeze. CAUTION: STORE IN REFRIGERATOR AND
USE WITHIN 4 WEEKS.
OPTIONAL: For spiced apple jelly, add 2 sticks of
cinnamon and 4 whole cloves to mixture before boiling.
Remove both spices before adding the sweetener and food
Also, you can check out Pomonas Universal Pectin which is used for all types of jams and jellies, even no sugar. They have a website plus a phone number . I hear they are really great at helping people with recipes. Some health type food stores carries it,too.
