Here are the details of the Aztec curse:
Anyone who took gold from the aztec chest was cursed...i.e. all the pirates of the Black Pearl except for Jack.
To end the curse, all gold pieces had to be returned and each person who took one, even a single piece, had to repay with his blood.
The prologue suggests that before the movie starts all the other pirates have gone through this ritual...only Bootstrap remained .
They couldn't get Bootstrap's blood, so they looked for his son. As his child, Will's blood would work in place of Bootstrap's...plus, Will was supposed to have the final gold piece anyway. But we know that Elizabeth had the gold piece...that's why Barbossa wanted Elizabeth.
