The spot for Cheng Chao-An in a Big Boss remake should go to Philip Ng. And yes, I'm aware that he starred as Bruce Lee on that Birth of a Dragon flick (which I have not watched yet). But he's a very formidable actor and martial artist regardless. To make my case, I would recommend checking out Once Upon A Time In Shanghai, which is a remake of a 1972 Shaw Bros flick named Boxer From Shantung. Sammo Hung plays one of the main characters in OUATIS, and the movie itself is Big Boss esque in a few aspects. That and Philip Ng's physique matches that of Bruce Lee's hunky yet youthful look from when he filmed the Big Boss.

As for Donnie Yen, "The New Big Boss" is just a title that American/British distributors slapped in for no rhyme or reason. It's original name is Legend of the Wolf. I haven't watched it either, so I wouldn't know how much in common it has with the Big Boss, if anything at all.
