. For one thing, in "serious street" you don't want the subjects to think too much about the fact that you took their photo. It also lets them know that you are using digital and they might request you to delete the photo. BUT worst of all it breaks your concentration on the next subject and/or a missed moment that might happen when you are looking at the screen.
f5.6 and iso 400 in the day and adjust the iso for light conditions. You have used a RF previously, so it's not that big of a change.... soon enough you will also want a film SLR or maybe a mid-large format hahaha...
