Pickled Cocktail Onions

Pickled Cocktail Onions

8 cups pearl onions
6 Tbsp salt
� cup sugar (only if you want them sweet)
2 Tbsp Mustard Seeds
6 cups white vinegar
Dried hot chili peppers to taste I use 2 per jar

Cover onions with boiling water; let stand 2 minutes.Drain, rinse in cold water and peel. Sprinkle salt over onions in a medium bowl adding water to cover. Let stand 18 to 24 hours Drain and rinse well.

Combine mustard seeds, vinegar(and sugar) in a heavy saucepan. Bring to a boil and simmer, uncovered 15 min.
Pack red pepper and onions into HOT, STERILIZED pint jars. Cover with hot liquid leaving ½ inch head space. Remove air bubbles, wipe rims and Cover jars at once with metal lids and screw on bands Process in boiling water bath 10 minutes. Yield 4 pints

To sterilize jars boil 15 minutes covered with water on a rack.
