Coq au vin...

... from the (? circa 1960) 'Crock-Pot Cookbook', posted here by request (although we have not yet tried it ourselves and would have to omit the mushrooms because of an allergy):

2-1/2 lb broiler-fryer chicken, cut up (or three chcken breasts, halved; or threedrumsticks and three thighs)
6 bacon slices, diced
2/3 cup sliced green onions
8 small white onions, peeled
1/2 lb small mushrooms
8 small new potatoes, scrubbed
1 clove garlic, crushed
1 tsp salt
1/4 tsp pepper
1/2 tsp dried thyme leaves
1 cup Burgundy wine
Chopped parsley

In a large skillet, sauté the diced bacon and green onions until bacon is crisp. Remove and drain on paper towel. Add chicken pieces to skillet and brown well on all sides. Remove chicken when browned and set aside. Put peeled onions, mushrooms, potatoes and garlic in the Crock-Pot. Add browned chicken pieces, bacon, onions, salt, pepper, thyme, and chicken broth. Cover and cook on 'low' setting for 6 to 8 hours (or 'high' for 3 to 4 hours). During last hour, add the wine and cook on 'high' setting. Garnish with chopped parsley.

I will probably fiddle with this a little.

JCG, this sounds really good and you have inspired me to go get a crock pot. I think this will help tremendously with meals once I start school. Thank you, Thank you!

Off hand, this is what I will do -

2-1/2 lb broiler-fryer chicken, cut up - I'll use 6 or 8 thighs depending on size the pieces.

6 bacon slices, diced
(one slice per thigh and den trow in a couple or tree fa da pot!)

2/3 cup sliced green onions

18 small white onions, peeled (I tripled the on-yawns! cause I loves 'em me!)

1/2 lb small mushrooms

8 small new potatoes, scrubbed (I will probably leave these out & make some nice mashed potatoes instead)

1 clove garlic, crushed (oooo man, dat's gotta get at least one clove per thigh!)

1 tsp salt

1/4 tsp pepper

1/2 tsp dried thyme leaves

1 cup Burgundy wine (I will probably use 1 1/2 cups reduced a bit first to make 1 cup - I loves me some wahn sauce yeah, cher!)

Chopped parsley

I finally did it!

No, not make the Coq Au Vin.

Bought a Crock Pot. A nice pretty olive green one that will go well in my kitchen.

I feel really silly not knowing how to use one. Just washed it & I am attempting to make Chicken Gumbo in the crock pot tonight. Should be ready about 8am or so.

If I would have had all the stuff for Coq Au Vin, I would have made that instead.

We will see how it comes out. If it is good, I will share the "recipe".

I really bought the Crock Pot for MFDC. He has been cooking all of the meals.
I got worried last week when he said he could not remember how to make a hamburger.

Sheesh! I took that as a message.

Damn good! I used the little onions. I made it in my 9 qt cast iron dutch oven. It was excellent.
