"Heart Smart King Cake" [Source: Ochsner's Cardiology department]

1 large apple (any variety)
1 pkg (8) reduced fat crescent rolls
2 T reduced calorie margarine
1 t vanilla extract
10 pkts Equal/Sweet One or other brand
1 + 1/2 t ground cinnamon
Cooking spray (can)
6 t colored sugar, purple/green/gold
Preheat oven to 350 degrees F. Slice apple and put aside. Melt margarine and mix in vanilla. Using a pastry brush, coat each strip of dough with half of the maragarine/vanilla mixture.
Combine non-sugar sweetener and cinnamon and sprinkle evenly over the dough strips. Wrap apple slices in the dough strips. Spray pan with non-stick cooking spray.
Bake for 15-20 minutes or until golden brown. Remove from oven; brush with remaining margarine and sprinkle with purple green and gold sugar.
Serves 8 (pieces).

[Poster's note: we haven't tried this recipe yet. It doesn't address the inclusion of a king cake baby or lucky charm. presumably the pieces could be arranged and baked as an annulus to look traditional and contain a surprise.]
