Beth - I forgot - I think I was going to send you some organized meal ideas! Here is a link to my blog post on our top make ahead meals for winter days. Usually on Sunday I'll make a big batch of one of the items. I use the ziploc (bpa free) cylinder containers and we usually get 1 meal, 1-2 leftovers and anywhere from 2-4 containers to freeze depending on the day. Sometimes I pair it with a piece of crusty bread or a salad. Each week we defrost 1 or 2 of the prepared meals and thaw during the day.
From spring-fall we often grill a whole bunch of meats/chicken on the weekend so we can throw it on a salad during the week. This saves a lot of time and grill gas!
Finally I highly recommend a vitamix blender if you can splurge or save for one. We do green smoothies several times a week so we can get the extra punch of spinach or kale into the diet. Even my daughter likes them!
