my sister's husband was also recently diagnosed with Celiac's after years of thinking it was IBS. She makes bread for him out of tapioca flour, there are many gluten-free cereals out there, and she is very careful about processed foods since most are not gluten free. He still eats meats, veggies, fruits, potatoes, rice - it's just the wheat gluten that is the problem. There are many pre-mixed gluten-free "flours" made of rice or soy or even almonds - you just have to find one you like. She's made a cake once, but cheesecakes without crust seem to be better. It made an instant change in his health!
