Well, here's what i think. This was a great scene. One that just added to the wonderful atmosphere generated throughout the movie by Mann. I think it was as important as the music throughout.

To me the coyotes represent the fact that we can meet completely foreign elements anywhere.The Coyotes were obvisouly out of their element, much like Vincent and Max. If you'll notice, one of the coyotes is reluctant to follow the other, kind of like he/she is being forced to follow which is like Max's situation with being forced to follow Vincent.

Alos, and this might be stretching it. Didn't Vincent's hair look a lot like the coat of the coyote?
