Hey guys... I figured it's that time of year again - when we start planning meals for our paddle and hiking trips. I've started a blog to post recipes athttp://backpackerrecipes.wordpress.com and if you have any questions just post them here and I'll pop in to answer them.

Great to see you back around, Laurie. Those look like some fabulous recipes...I've taken crab in before but just scarfed it down with cheese and crackers. I'll have to make some crabbie patties next time!

oh - if you like crab then I'll have to dig up this recipe and post it... it's a little work but well worth it.

Glad to be back... and as promised...

Warm Crab and Artichoke Heart Dip
from A Fork in the Trail

Dehydration Time: 812 hours
Makes 24 servings

This is a rich and decadent dip that only takes a few minutes to prepare. Serve with bagel chips or crackers.

1/3 cup canned or jarred artichoke hearts, chopped
3 tablespoons Parmesan cheese, grated
2 teaspoons dried chives
1 pouch (3 ˝ ounces) or can premium crabmeat
3 single serving packets mayonnaise or whipped salad dressing
1 tablespoon lemon juice
1 tablespoon butter
Hot sauce (optional) to taste
Salt to taste

At Home
Dry the artichoke hearts on dehydrator trays until thoroughly dehydrated. Wrap the grated Parmesan cheese in plastic wrap. Place the dried artichokes and chives in a ziplock freezer bag along with the pouch of crab, bundle of grated cheese, and the mayonnaise. Pack a lemon or add the lemon juice to any other lemon juice you will take on your trip. Pack the butter with the other butter you are taking. Pack hot sauce if desired.

At Camp
Cover the artichoke hearts and chives with boiling water to rehydrate. Set aside for 10 to 15 minutes and then drain off any excess water. Put a little butter in the bottom of your pot over medium heat. Pour in the artichoke mixture and sauté for a few minutes. Stir in the crab and heat for a few moments. Remove from the heat. Add the mayonnaise and cheese and combine well. Stir in the lemon juice and hot sauce.

Tips
If you combine the artichoke and chive mixture with cold water at breakfast, itll be reconstituted by lunchtime.

That looks fantastic! I think the only change I'd make is on the hot sauce...I'd probably use Old Bay seasoning instead. Nothing says crab like old bay does! Thanks so much for sharing.
