I just moved to Southern Cal from the East Coast. I had assumed that any problems I would have with maintaining temperature for fermentation would be keeping the wort cool. Temperatures where I live range from the low 40s at night to the mid-60s in the daytime. I had hoped to do my brewing in my (unheated) garage but I fear the night temperature run to low for the yeast I will use to brew a robust porter. (Yeast is rated at 59 - 75 degrees F) I'd prefer not to bring the fermenter into the house but I may have little choice.

Does anyone have any thoughts. I have considered using a waterbath in a plastic tub and using a aquarium heater to control the temperature of the water.
