The wiring sounds right. They most likely ran romex in the wall which is the right procedure. Running low voltage in the walls does not meet code. You are also correct in that the ground wire on the low voltage side is not used. I usually use some form of cover for the wire from where it comes out of the wall to the end of the track. Home depot actually has a thin wire mold or standard size that has double face tape and can stick right to the bottom of the cabinet. Sounds like you are all good to go.
