Kitchen Lighting Advice

We have an 80's ranch on a horse property outside Phoenix, Arizona. We're slowly upgrading the interior and have now arrived at the 2nd pass on the kitchen. The layout is shown in the following link

Not shown is a butcher block work table set between the island and the refrigerator/range, where much of the cooking prep is done and good lighting is needed.

We want to redo the lighting. The ceiling slopes (1 : 4.2) up from the outside wall with the sink at 8' up to over 11' on the other side. The current main light comes from a bizzare 4'x8' hanging solid oak fixture that matches the cabinets and resembles an old fashioned recessed 2-40" tube florescent light from the 70's. Unique, yes ... desirable, no. This has to go!

We want to do recessed lights for the main lighting, install 3 pendant lights over the island, and keep the halogen track lights I installed over the sink on the oak trim piece that connects the cabinets on either side of the sink.

The problem is how to space and size the recessed cans for uniform illumination, as the ceiling slopes from 8' to 11'+ along the range and refrigerator wall. Or should we give up on cans and do a suspended track light?

Any suggestions are welcome!
