Kitchen Lighting Plan Help

We're planning on remodeling our kitchen at the end of the summer and I'm starting to lay out my lighting plan. I'm hoping to get some help with the layout.

Our kitchen is about 12'x12' and we'll be removing the wall between the kitchen and dining room. Our ceiling is about 8' high. I hope the link below with my kitchen layout works.
- I'll definitely have a chandelier (5 - 60W bulbs) above the dining room table and 2 mini pendants (60W bulbs) above the peninsula. These will be on separte switches.
- I'm also planning on getting undercabinet lights (Kichler xenon direct wired units or similar) and having 2 switches (1 for each wall of cabinets) and a 4" halogen can above the sink on its own switch (or should I go with 2 cans?).
- Since we don't have central AC and live in NJ, we're planning on putting a ceiling fan in the kitchen as well.
- So if I place the ceiling fan close to the center of the room (close to where "Kitchen" is), can I get away with only using four 5" recessed cans (1 on either side of the range and 2 along the run of cabinets next to the fridge)? Or do I need 2 more cans on either side of the fan? Or should I just get a fan with a light attachment instead? I'm thinking that with the 5" cans that we'll probably end up using R30 incandescent bulbs?
