Any of your programs look good. I am new too and not an expert, but I don't think you need to take fennell and fenugreek at the same time...they do the same thing, as I understand it.
I have to tell you that the physical symptoms you describe are frequently caused by birth control pills. You might want to look into that. Here are some links:

I am new to NBE also, but I will tell you what has worked for me so far...and you can look at my program (Corrie's Program), which is very simple and is pretty similar to some of your sample programs.
The first month or so, I took way too many herbs and way too high doses...I think I started out with more than 2400 mg of FG...I did feel some tingles and fullness, but I think I stalled out right away. I also tried adding EPO, and I think this may have contributed to the stalling -- of course this is just a gut feeling and not certain.
My program now is pretty moderate on NBE herbs...approximately 1200 mg of FG and 1000 mg of SP per day (see program for exact details). I also take Dong Quai and Vitex, but I am taking these mainly for PMS, even though I hope they are also having a postive effect on NBE. I also switched my oil to a mixture of borage, flax and fish oil.
The one thing that I feel has made a big difference is the cocoa butter massages (followed by 30 minutes of heating pad).
I am also drinking protein shakes and eating a lot and have gained about 6 pounds...I wasn't underweight before, so I'll have to keep an eye on this, but for now its ok...my BMI is around 20.5 and I think this is helping.
So my advice to you would be to create a very simple herb plan to start, definitely include cocoa butter and vitamin E massages, and gain as much weight as you are comfortable with by drinking protein shakes and eating.
Whether you think you would benefit from taking nettle root needs to be a separate decision from everything else. If you think it's helpful for you, you need to regard it as an additonal herb to whatever else you take.
