Can't help you on Granite, but here's what I know about campsites on Borah Peak:
When we tried Borah (as a dayhike) in '04, we saw a handful of small but usable tent sites where the trail first hits the top of the ridge leading up to Borah. Camping there would save a fairly short (less than 1 mile) but relentlessly steep stretch of the trail and cut your time-to-summit by an hour or so on the way up the next day. Indeed, I plan on using one of those the next time I get out to ID to try Borah. There is
zero water available on the trail to Borah, so you'd have to pack what you needed for the evening plus the summit and back to the trailhead the next day. For a look at the trail at least as far as the snow bridge

Can't help with current beta about the snow bridge(s), sorry. (This year we did 100 miles out at Philmont, the big Scout ranch in New Mexico. Next year, back to highpointing!)
