I have a Winchester 800x(wood stock, Turkish). I don't have a chrony, but was curious as to how many fps I can expect? It appears to have quite a bit of pop with Crosman Premier HP 7.9's. At about 5yds it will penetrate a 2x6 just shy of 1 inch in depth.
Also, it seems to be on the loud side with spring twang. Would it make a difference, with noise and smoothness, if I removed the stock and put a little grease, tar, or lubricant on the exposed part of the mainspring? I currently don't have a spring compressor and I didn't want to completely disassemble the rifle at the moment.
Also, what would you gurus recommend that I put on the mainspring?
Would anything in the typical household work, ie: wheel bearing grease, vasoline(petroleum jelly), auto chassis lube, etc.

These guns typically produce what they advertise when it comes to velocity. The 800x doesn't use the tophat like the 1000x which might be the cause of some of the spring noise. Adding some tar should help a bit and you might be able to squeeze some in through the cocking slot. The only grease I have heard of working is CV axle grease but I have never tried it myself. All the ones you mentioned will be too thin.
