I don't have any really good low carb recipes that can be frozen.

But then I started to think about how I handle time management.

I have several health problems that require me to be low carb, no gluten, and be able to do most of my food prep early in the day or throughout the day and have my late afternoons and evening fairly work free.

I do a lot of spicy soups and stir-fries and handle that by having my protein, fish, meat, chicken, etc., diced up and in a container if the fridge. I also slice and dice enough veggies, and put them in plastic containers to last me for a few days. I also mix up a container of stir-fry sauce: soy, broth, ginger, spices, sweetener, corn starch, etc. I can then toss together a soup or stir-fry in just a few minutes. I use the boxed chicken broth for my soup base. I always have a jar of Thai Tom Yum soup paste and a jar of Thai Yellow Curry paste to flavor up my soups.

We love Thai food and although it is not low carb, this is a very fast recipe to make and you could just have your meat precut and frozen.

Thai Yellow Curry for two

Saute 2 3 large diced chicken breast (set aside)

Saute ½ large onion
Add to onions:
1 can coconut milk
1-3 tsp yellow curry paste
1-2 heaping T. peanut butter (optional)
2-3 diced carrots
½ bag frozen peas
(you really can add any veggies you want)

Add chicken and simmer until veggies are tender.


(the fast way to make sticky rice)
Sticky Rice for two

1 - 1½ cups Jasmine rice soaked for at least an hour in glass bowl.
(it depends on how much rice you want as to how much you use, we like lots of rice)

Drain and add fresh water to cover about ¼ inch.

Put plate or lid on bowl and microwave for 3 minutes.

Stir and microwave for another 3 minutes, if it starts to boil over stop, and stir as often as needed. Test for doneness and continue to microwave for another 1-2 minutes as needed.


If you are making this for 4 you may need to do the rice in two separate batches because the uncooked rice and water should not come above half way up the sides if the bowl.

The secret to always having very tender chicken in your soups.

This works for any kind of soup.

Take your diced raw chicken and toss in a bowl with a little cornstarch, you may have to add a tiny bit of broth or water to get the cornstarch to make a thick paste around each piece of meat. When you soup comes to a boil, slowly add the meat. You will have the tenderest chicken you have ever had in a soup.

it's not easy to think of freezer meals when you are used to eating quick stuff like stir-fry. so it's a great idea to have things prepped and in the fridge or freezer.

btw, some brands of those "steam in bag" frozen veggies are really good, too. not for stir-fry...but a 3 minute side dish.

Right now we have lots of fresh veggies in the garden to use!

We just planted some seeds for winter veggies but sometimes that works and sometimes it doesn't. Depends on how many sunny days we get throughout the winter. Heat is not a problem since we have the greenhouses but if we don't have enough sunlight, they just wimp off!!

I am sad, our Sugar Snaps finally gave out on us a couple of weeks ago!

They are my favorites! Our green beans are winding down now.

We just planted some bush beans in the green house to see if we can get a winter crop of them, but that will depend on how many sunny days we get. Not enough sun and they just wimp off.
