For you all that are on low carb or glutin free diets. Coconut flour!! (edited)

I just got some and have only used it twice but so far am very happy with it! It is approx. 46% fiber, and low carb. There are tons of recipes for coconut flour and a lot of them are sugar free, low carb. It thickens much more than regular flour so you use much less and 4 times the eggs, which up the protein and lowers the carbs. So far I have made cheese biscuits and Swedish pancakes. Tonight I am going to make fried chicken with it and see how that works!!

It seems to work better for muffins and biscuits than for pancakes and frying. It seems a bit grainy in pancakes and I had a hard time making it stick to the chicken for frying, but I may have tried to make the coating too thick. I am still experimenting!

Some say there is a slight coconut flavor but I can't detect it, but

I am having some tasting problems. My hubby said he could not taste coconut.

I have developed burning tongue problems and just found out last night that it is probably due to my blood pressure meds and not the prescription nasal spray for allergies I was using. Since it is well known that the nasal spray distorts ones sense of taste I thought it was that and stopped using it. But, six months later I still have the problem and it has now developed in the burning tongue problem. I researched it last night and there are several things that can cause this problem, I am hoping it is my meds because that can be fixed! Unfortunately, I have to wait 3 weeks to get in to see my doc and get my meds changed!!

Annie, have you tried B-complex vitamins? . . .

Tongue problems are frequently tied to Vit B deficiencies. My stepdaughter once had a very sore tongue and it looked strange -- I checked Adele Davis, then gave her Vit B pills and it took care of the problem. Worth a try if you are not already taking them -- or you maybe need more.

Good news and bad news!

I have not been around much because I just feel awful and don't even want to think about much!

The good news:
Went off ACE inhibitor BP meds and my legs stopped feeling heavy and numb and I no longer get tired in the middle of the day. I feel much better on the new meds and my BP is much more stable.

The bad news:
Changing meds did not help my burning tongue/taste bud problem at all. In fact the stress has caused me to get ulcers on my tongue, which hurt like hell! There is no real treatment, just wait the 2-3 for them to clear up! I am trying rinsing my mouth with colloidal silver several times a day, and in just 2 days the ulcers seem to decreasing in size and pain level so I am hopeful that it will not take nearly 2-3 weeks to clear them up.

I am trying several home remedies and reducing the supplements I am taking to see if that makes a difference in my tongue problem. Only time will tell!

Yikes, if it is not one thing it's another. That ulcer sure sounds painful. I hope you find some relief and an answer soon to this particular problem. Feel better soon, Annie.

I had some sores in my mouth for a SHORT time(during chemo 10 years ago)and it made me miserable. I say this cuz if I was feeling that bad, it must be 10 times worse for you and I shutter.you are always such a trooper. I admire how you keep going even tho you have so much going on.

There were a few months where I almost shut down and wanted to give up.

I had lost about 50% of my hair, I had a constant rash on my face and around my eyes that was miserable, I was numb from the knees down, got so tired that I fell asleep every afternoon and felt like there were weights tied to my legs. Gained way too much weight, and my allergies made it hard to breath sometimes!

After changing my BP meds, changing my diet and going to a dermatologist that got my face cleared up in days, all of the stuff above has disappeared. So right now, as miserable as it is to deal with my mouth problems, I at least have hope and have a lot more energy. Well, at least I am losing weight because of the change of diet, which is easy to stay on because most things taste like crap anyways!!
