i'd arrange the nachos on a plate, scatter the cheese and sliced black olive rings and jalapenos. under the over grill for a few minutes until the cheese melts. lots of freshly made spicy salsa on the side and wash down with a couple of icy cold brewskies

btw, have you ever tried different white balance?
