I bet you'd like banana bread as well. I always used the reduced price 'too ripe' bananas and mashed them up, added to quick bread recipe. I'm guessing it would be similar for banana pancakes...mash and add to pancake batter. Never made them myself. Ah bananas. Babies love to eat them mashed as well.
