Did all of you know that the official "state question" is: Red or green?
This is in reference to the type of chili you prefer. (New Mexico is a huge producer of chili peppers!) You know what? Along with doing a pictorial of a Colorado vineyard/winery, I should consider doing a pictorial of a chili pepper farm in New Mexico. Wouldn't that be cool?

Red is also very good but green has a very veggie,almost undescribable zing to it. Green chile is also great for making green chicken enchiladas. Any degree of spiciness will work fine.

And if you are in NM and ask for you chili Xmas style, you will get both! I think NM has, hands down, the BEST chili. When I visit my daughter in Albuquerque, I always order something with chili. It is everywhere.

I was wondering the availability of chile in the US. Some people say they miss it and i'm curious where the borders of chile use and purchase is here in the US.

i miss having green chilies available. Every place in Missouri serves food with red. Not a real problem, but i much prefer green. Speaking of which, does anyone have a good recipe for pork green chili.
I have mentioned before about a trip to Canyon City in March 2004 with some friends. We ate breakfast at the diner in Rip Griffins in Limon. They had green chilies on the buffet. My Missouri friends thought I was crazy when I mixed them with my eggs. YUM!!

hi Steve...
you know that in NM the red chili is VERY good. Most red chili is not made right. WE are going to get an authentic NM RED chili at the Homestead and when we do, it will really be a great addition.
Glad you liked the Greeen chili burger..I love that stuff and most of the time it is based using a green chili from NM!
my daughter will be her this weekend and she has a NM RED chili recipe...I htink we'll try to make it.

on what I'm eating my chile with.....2 things are 100% carved in stone for me anyway.
1. Chicken Enchiladas...GREEN
2. Carne Adovada Burrito...RED
And a frosty Corona to wash it down with...Mmmmmmmmmmm

It's 11:27pm and reading your post has made me ravishingly hungry for culinary delights made with both chilis!
Have you been thru there in the past few years? I live in Durango, but commute to Farmington 2 times a week. Bloomfield still looks familiar, but has grown into a sizable community now. They even have a hotel now! I have several friends who live there and visit regularly.
I have not been in Blomfield since 1993. I miss it horribly. I keep in touch with a few friends from school and my english/drama teacher.
I talked to someone the other say that said they stayed at the KOA in Bloomfield...I was like wow that is a mile from the house I grew up in. LOL
I want to go back so bad at least for a visit! I keep trying to convince hubby we need to take a road trip through Colorado and stop in Durango down into Bloomfield and keep going south till we get to Carlsbad (I've never been there) and then go back through Fort Sumner and to Amarillo, TX(to see my dad)to Vernon, TX (grandma) and back up to Kansas through OKC. Just a big circle. I would so Love it!
Hubby is a truck driver and the last thing he wants to do is take a driving vacation! LOL Wonder why?? My older 2 kids were born in Famrington, but they haven't been there since they were 3 and 2...so they would like to go check out where mom hung out!
