Charcoal.jpg

Charcoal on Jack Daniel's barrels.  N.O. Rum gets these from "Jack" when "Jack" discards them

ClosedKegs.jpg

Closed fermentation vats.  N.O. Rum uses both closed and open vats. If I'm not mistaken, these are actually manufactured as beer fermentation units.

In a small room and done by local college students.  I bet they love their job.

Corks.jpg

In the bottling room.

The main ingredients

Louisiana molasses, cane syrup, N.O. tap water ("osmosified"), and N.O. Rum's special yeast which began its' life while growing on sugar cane in a field in Edgard.

Kegs2.jpg

Wine

If I'm not mistaken, those kegs along the back wall hold La. cane wine.
